data-contrast=\"auto\">as a\u00a0<\/span><span data-contrast=\"auto\">way to<\/span><span data-contrast=\"auto\">\u00a0destress<\/span><span data-contrast=\"auto\">\u00a0(and save money)<\/span><span data-contrast=\"auto\">.<\/span><span data-contrast=\"auto\">\u00a0Then, during the \u201cspring break\u201d portion of\u00a0<\/span><span data-contrast=\"auto\">the lockdown when time was at its most unreal<\/span><span data-contrast=\"auto\">\u00a0and grocery store shelves at their emptiest<\/span><span data-contrast=\"auto\">, I lost interest<\/span><span data-contrast=\"auto\">.<\/span><span data-contrast=\"auto\">\u00a0<\/span><span data-contrast=\"auto\">Meals during this time tended towards<\/span><span data-contrast=\"auto\">\u00a0digestive biscuits, large quantities of oatmeal, and<\/span><span data-contrast=\"auto\">\u00a0raw carrots eaten despondently at my desk.<\/span><span data-contrast=\"auto\">\u00a0<\/span><span data-contrast=\"auto\">But now that summer term has picked up, I\u2019ve gone back to cooking\u00a0<\/span><span data-contrast=\"auto\">as a\u00a0<\/span><span data-contrast=\"auto\">welcome\u00a0<\/span><span data-contrast=\"auto\">distraction from everything.\u00a0<\/span><span data-contrast=\"auto\">I find it a bit\u00a0<\/span><span data-contrast=\"auto\">more of a challenge\u00a0<\/span><span data-contrast=\"auto\">now that I only buy groceries once a week<\/span><span data-contrast=\"auto\">\u00a0since I like to make whatever I<\/span><span data-contrast=\"auto\">\u2019m feeling at the time instead of planning meals in\u00a0<\/span><span data-contrast=\"auto\">advance<\/span><span data-contrast=\"auto\">, but I\u2019m making it work<\/span><span data-contrast=\"auto\">.\u00a0<\/span><span data-contrast=\"auto\">Frozen veggies\u00a0<\/span><span data-contrast=\"auto\">and lemon juice\u00a0<\/span><span data-contrast=\"auto\">a<\/span><span data-contrast=\"auto\">re great friend<\/span><span data-contrast=\"auto\">s<\/span><span data-contrast=\"auto\">\u00a0to have.<\/span><span data-contrast=\"auto\">You really can\u2019t go wrong with a big pot of soup, particularly when you have\u00a0vegetables you&#8217;re trying to use up\u00a0(carrots and kale in my case).\u00a0<\/span><span data-contrast=\"auto\">I saut\u00e9ed the\u00a0o<\/span><span data-contrast=\"auto\">nions, ginger,\u00a0<\/span><span data-contrast=\"auto\">and\u00a0<\/span><span data-contrast=\"auto\">cauliflower<\/span><span data-contrast=\"auto\">\u00a0<\/span><span data-contrast=\"auto\">in\u00a0<\/span><span data-contrast=\"auto\">a\u00a0<\/span><span data-contrast=\"auto\">pot<\/span><span data-contrast=\"auto\">\u00a0for a few minutes until a little brown. Then added some water<\/span><span data-contrast=\"auto\">, along with the lentils, potatoes, and carrots.\u00a0<\/span><span data-contrast=\"auto\">I l<\/span><span data-contrast=\"auto\">et that simmer until the lentils and vegetables were so<\/span><span data-contrast=\"auto\">ft, then<\/span><span data-contrast=\"auto\">\u00a0added to<\/span><span data-contrast=\"auto\">mato paste, coconut milk,<\/span><span data-contrast=\"auto\">\u00a0and handfuls of<\/span><span data-contrast=\"auto\">\u00a0kale<\/span><span data-contrast=\"auto\">.
